New recipe Sunday.

Sunday is normally a busy day to get ready for the week. Then I'm always sad Sunday night that the weekend is over. Sunday is also a day that I try a new recipe, today was no different



I slept in this morning until 8:30 am. Yesterday at Whole Foods I picked up a Vegan Oat Scone. I decided it would make a great breakfast. I added 1/2 teaspoon of jam and 1/2 teaspoon of peanut butter.


While unpacking some groceries, I tasted some cherries that we bought at a local farm. These were so good. I haven't had cherries yet this season and these were so good.





For lunch I made a sandwich with a Ezekiel english muffin, some mustard, a slice of soy cheese, and a few slices of Smart Deli veggie ham slices. On the side I had some carrots and the last of the pretzel crisps.




Here is the Smart Deli ham. It tasted good on this sandwich, but I think I prefer the Yves Veggie Ham Slices.




While I was making dinner I made the hummus recipe from Veganomicon. I had a little from the food processor blade. It was good, but the recipe suggested placing in the fridge for 30 minutes before serving, so I can't wait to try it tomorrow.


For dinner I made Grilled Portobello Mushrooms with Artichoke Puree and Roasted-Corn and Tomato Topping. It was a recipe from the July Shape magazine. I was so surprised that Shape had a handful of vegetarian recipes in this magazine. It was such a delicious combo of flavors. My husband even said we need to have this again soon. With the mushroom (that runs only 216 calories each) I had a 1/2 of potato with a spoonful of whipped cottage cheese, and fresh asparagus.

I felt like a glass of wine with dinner so I had 4 oz of white.



After dinner I had a Vegan Chocolate Cupcake from Dozen bake shop. Last night my husband and I both picked out a cupcake on our walk. I thought the cupcake was a little dry, maybe it was because I didn't eat it fresh. Really don't know if this small cupcake was worth $2.50.


I have a super busy week coming up at work and am kicking myself that I didn't work on a work project that needs done by tomorrow night. Off to relax and get to sleep early, so I am ready to get up for the gym at 5am.

Too bad about the cupcake - it sure LOOKS good though :o) Those scones look so amazing every time I see them, but I haven't actually bought one yet. Maybe my next trip to Whole Foods will rectify that!

mmmmmmm that breakfast does look perfect :)
