Happy Thanksgiving!!

Happy Thanksgiving!! For breakfast this morning I had a scone from Whole Foods, with some jam, chocolate dreams, and cinnamon raisin peanut butter. Steve picked up this scone a few days ago, and I'm not sure what flavor it was.

I also had a glass of light chocolate Silk soy milk.

After breakfast we went to the gym. I ran 4 miles on the treadmill and then did some bench press exercises. For lunch I had an individual packet of Annie's mac and cheese with some Morningstar crumbles and peas.


I didn't take pictures of the food I ate for dinner, but I did take some pictures of the preparation of the first Thanksgiving we hosted.
This morning I made a 100% Whole Wheat bread in my breadmaker. It was very good. I think I might see what other flavors of bread mix Bob's Red Mill makes.


This is my tofurky before it cooked in the slow cooker. Steve actually prepared all the additions (onions, carrots, potatoes, mushrooms, and some veggie broth).


Here are a few pictures of our dining room. I bought the napkins and placemats at Target and the tablecloth from Bed Bath and Beyond.




My mom brought this hummus. It was cranberry fig. She found it at Sam's Club and it was amazing!! If you can find this, I highly encourage you to try it. I'm sure it is just seasonal.


Vegetarians please shut your eyes.
Steve was very proud of his first turkey, so he made me take a picture. I have not eaten meat for 14 years, so I did not try this turkey. However, I am proud of the wonderful meal my husband made.

This is a little spread of snacks my mom brought with the hummus.

I made pumpkin pie (put I didn't take a picture) and apple crumble. This dessert had walnuts in it, so I may submit it as the BSI of the week. I'll post the recipe either way, but not tonight, I'm beat.

My husband also made an amazing vegetarian stuffing and mashed potatoes. Our friends brought an amazing salad with homemade dressing. I had one plate of dinner and some dessert. I also snacked on some chips and hummus before dinner.

The holiday is near.

I'm so happy that it is Wednesday!!! I hope work flies by today, because Steve and I have a lot to do to get ready for hosting Thanksgiving dinner tomorrow.

Breakfast was a PBJ on an Ezekiel English Muffin with 1/2 peanut butter dreams and 1/2 cinnamon raisin peanut butter and strawberry preserves on both.

One of the secretaries had a huge tub of organic winnie the pooh animal crackers so I used the spoon she provided and took a few. The tub was from Costco.

At 12:30 I went to the gym with Steve and we did a 1 mile run to warm up and then we did 6 different upper body weight exercises (3 sets of each, 10-12 reps each set).
For lunch I had oatmeal with frozen berries and topped with Udi's granola. So yummy! I mixed in the Yogurt after I took the picture.

At 4pm I ate a kashi granola bar.

Steve and I car pool, but he is always done at work before me, so tonight he went to Home Depot and then picked us up dinner at Pita Pit. I ate my falafal pita in the car on the ride home.

A little later I had two pieces of chocolate:

Steve and I went and did a couple errands, and when we got home at at 9:30 I made a little snack of a few PB Puffins, trader joe's chocolate squares cereal, annie's chocolate chip bunnies, and a few pb and chocolate chips. This was maybe 1/2 cup total, but I didn't measure.

I can't wait to post pictures of the first Thanksgiving we are hosting. I got placemats and cloth napkins to set a nice table.

I'm all about great deals, so usually every Black Friday I'm waiting in line. Are you waiting in line? Amazon already has a Black Friday Sale online, so maybe this year I'll just shop online. Amazon has great deals on some books that I may try to take advantage of. But, I think Steve already has plans to wake me up super early on Friday, so I think I may have no choice.

Fall Foods : )

For breakfast, my husband made me a latte and I had a Luna bar.

Right before I walked out the door, I decided that the above would not be enough of a breakfast, so I had a piece of toast with chocolate dreams and strawberry preserves.


For a mid morning snack I had some grapes.

I went to the gym at noon and ran 1.7 miles and then did 13 minutes on the stair climber.
Lunch was a Kashi Veggie Sandwich pocket and some raw veggies (carrots, cucumbers, and snap peas) dipped in a little Newman's Own Honey Mustard dressing.


Around 4pm I had some yogurt and the last of our berries.

As soon as I walked through the door from work I put the acorn squash in the oven and tried to go upstairs and do Pilates (last week was the last week of the fall semester Pilates class I take at the community college). Then in the middle of my workout the DVD froze on me and I couldn't get it back to the place it stopped. We may have to take this TV (DVD player built in) back. We have only had it for a few months and it skips each time. Plus, my Pilates DVD was brand new, so it wasn't dirty or scratched.
For the stuffing in the acorn squash I used Lindsay's awesome recipe I saw a while back on her blog For the Love of Oats. On the side I had a piece of bruschetta.


After cooking dinner I told my husband that I would make him a pumpkin roll - he had been asking for a few weeks now. I used a recipe I found online like 5 years ago. I had printed it out back then, and it was in my mom's recipe box. So, long story short, I don't have the link, but I think that is a pretty basic pumpkin roll recipe. You can even find a recipe on the inside of the Libby's Pumpkin label.

I didn't try it, because I have never really liked pumpkin roll, but my wonderful husband exclaimed that it was better than store bought :)

Busy Weekend..

I went AWOL this weekend on my blog. I'll be back tomorrow night with my eats. I was also so busy that I didn't get to do a BSI entry this weekend, which was sad because I had a lot of good pumpkin ideas.

Chocolate Fix.

I switched it up a little today and had 1 cup Kashi puff cereal and 1/3 cup chocolate granola mixed with Oikos honey flavor and some berries. This was the first time I tried the honey flavor, and it was good. My favorite is still blueberry though.

I had grapes for my afternoon snack.

I went and got a latte for lunch, because I wanted to meet up with my husband for a little bit and my lunch seemed to be lacking in the protein department. The milk in the latte sounded like a nice addition.

I packed a nice salad and a serving of soy crisps for lunch. I added dried cherries and almonds to all the veggies in the salad. I really love the flavor and the texture.

Around 3pm I ate my fuji apple.

My husband wanted to go to the gym before going to his MBA class, so around 4pm I took a break and ran 20 minutes on the treadmill.

On the way back to the office I grabbed Pita Pit with Steve, because he needed a grab and go dinner before class. I had the falafel with almost every veggie they offer on a whole wheat pita with honey mustard. We bought a ton of gift certificates during a 1/2 price promotion a radio station here was doing for Pita Pit, so we may need to eat Pita Pit at least once every 2 weeks to use these up.


I got home around 6:30 and decided I had time before my 8pm Pilates class to make Tina's Chocolate Pumpkin Loaf. I made a few minor alterations. I used 1/2 cup brown sugar instead of 3/4, I used 1 1/4 cup of whole wheat pastry flour instead of the flour combo that Tina used, I also only used 1/2 cup of chocolate chips. Also both my cocoa powder and chocolate chips were dark chocolate, so this Loaf was very rich, but so wonderful. My husband couldn't believe I cut back on the chocolate chips. If I bake something when he is home he takes care of adding the chocolate chips or m&m's and basically adds double what is called for! He still loved the bread!



I had a slice when I got home from Pilates, and it was such a great recipe. I really love all of the creative baked goods that Tina comes up with. I was so happy that I had all the ingredients for this loaf and was able to make it last night!


Happy Thursday! Steelers play tonight : ) People at my firm are selling their tickets like crazy because it is going to be freezing and snowy!

The week rolls on!

Tuesday I started out with the same breakfast I had on Monday. It kept me fueled so well, plus I have a couple extra servings of steel cut oats that I made Monday morning. Plus, I bought these berries from Sam's club, so I have a lot to use up.

For lunch I ate an individual serving packet of Annie's mac and cheese and I added to it peas and a garden burger. On the side I had some tomato. I didn't eat lunch until 2pm and ate breakfast before 7am, so by the time I ate lunch I had a major headache.


To try to get rid of the headache, I went and got a skinny latte from Starbucks. Oops, forgot a picture, see yesterday for what a latte looks like : )

Around 4pm I ate my apple. These also are from Sam's, so I'll be eating one a day most likely, so don't get bored!

I snacked on some baked lays (no picture) when I walked in the door. Hubby and I decided to make a quick garden burger with a side salad, so that we could get to the gym.
This picture looks like the tomatoes are eyes and the cucumber is a mouth. I don't think my husband did that on purpose, but he did make a wonderful salad!
We tried to make it to a Spin Class that runs from 7:30 - 8:30, but we got there at 7:15 and the sign up sheet was already full! So now we know we need to be there at 7pm to sign up. I ran a 5K on the treadmill instead and then we did some weight training focusing on my back.

Around 9:30 I decided I was a little hungry so I had a mixture of PB Puffins, dark chocolate chips, peanut butter chips, granola, and dried cherries.

I watched biggest loser on my DVR, so that I could fast through the commercials. I don't want to give away what happened, but the end made me so mad!! Ha, ha, I get so into this show. Alright off to start my Wednesday!

Snow is falling.

I was too tired last night after my late Pilates class to post Monday's eats. Today was the first snowfall of the season in Pittsburgh, and it is so cold now, that I just wanted to sleep all day. But at least Monday is gone...here is what I ate...


For breakfast I made steel cut oatmeal in my rice cooker. I soaked the oats in water and a tsp of vanilla overnight and then turned the rice cooker on in the morning.



I added berries and a Oikos to my oats. Such a good and filling breakfast.

I was really drained at 11am, I had ate breakfast at 7am plus was behind on sleep, so I had a latte.
I went to the gym at lunch and did 30 minutes on the stair climber.
I ate lunch around 1:30. I had some leftover soup from Sunday and some sugar snap peas. I love the sugar snap peas, but they are rather pricey, because they are not in season.

An hour later I had some grapes.


Around 4pm, I ate a fuji apple.

Dinner was on my own tonight, because Steve had MBA classes. So I toasted two left over pancakes and dipped them in a little pb and maple syrup. Also on the side I ate some PB Puffins and dried cherries.



I had Pilates from 8-9pm, and when I got back I had a few baked lays and pretzels (no picture it was a quick grab).
