Dinner at Mom's!

I didn't get to pack my breakfast and lunch last night, so this morning I grabbed whatever a could quickly. I decided for breakfast to take 1/2 cup oatmeal, a banana, and a cherry vanilla yogurt. This was a great breakfast even though it was 90 degrees out, because the office air is always so cold!
Around 11am I had these beautiful cherries for a snack:

I needed to de-stress so I told a quick break at lunch and took at Spin class. I did about 40 minutes. The bad thing was even after I showered I was still sweating because it was just too hot outside! I guess because of the heat I didn't feel like eating and I really didn't want the main part of my lunch which was edamame (so I didn't have it). I had my watermelon that was meant for my afternoon snack and hummus and carrots.

About an hour later I had a 100 calorie bag of popcorn. I pop this at home either the night before (or today this morning) so that I don't have to carry popcorn all the way from the kitchen area to my office and smell up the whole office.


Around 4:30 I decided I wanted some iced tea, I was going to get the brewed unsweetened kind and add Splenda, but Steve and I decided that we should try to stay away from artificial sweeteners (we have a ton of Splenda for baking so I think we need to use that up before banning it). So I tried this Organic tea that is lightly sweetened only 40 calories for the whole bottle and peach flavored. It was a little too bitter for me, I guess I need to get used to the lack of sweetness that Splenda adds to my tea!




I left work at 6:20pm because I was really hungry and had plans to eat at my mom's house because Steve had MBA class. My mom made a crustless quiche type dish that she used to make me growing up. She used a ton of different veggies, 1/2 cup Bisquick, 1 cup milk, 1 egg white and 1 whole egg.

It was so good. Bisquick isn't the healthiest thing in the world, although I'm not sure of the stats because I never buy it. Here is my piece (I did go back for another smaller piece) on a small salad plate and a salad. Also sparkling water and lime.


When I got home I decided to have a snack of PB Puffins, chocolate chips and a spoon of peanut butter.

I am so happy tomorrow is Friday. I have a fun night planned tomorrow that includes dinner at a great mexican restaurant and stand up comedy at the Improv.

that quiche looks so good..i made something similar to that once with the bisquick mix...except i used their new heathy heart smart (whatever) one...and it tasted just as good!

and your dessert sounds sooooooo good! i'm gonna have to try that once!

That stethoscope sounds like a great idea, especially since it's perfect for children- his primary patients! I know the one I have to buy for the fall is a Littman S.E. Classic II...but there are so many different kinds! Having it engraved sounds like such a special gift. Congrats on him graduating!...I have 2 more years until that day comes for me, haha. On another note, your food looks delicious, as always!- How do you like the flavor of pb puffins? (I've just had the cinnamon)...Have a great weekend!!

Ah, love Rainier cherries! They are the best of the best :o)

That quiche does look great. We have an egg casserole that's somewhat similar at our house during the holidays - YUM!

Great idea with the popcorn. I have to be honest, it drives me crazy when someone pops a bag at work. Also, I work in a chemistry lab, so if someone on any of the fourfloors burns popcorn it's like EVERYBODY EVACUATE!!!
