I stopped at Starbucks on the way to the office, because I knew it would be a long day. I pack my breakfast to eat at the office and today it was muesli with 1/3 oats, 2/3 unsweetened chocolate almond milk, 1/8 cup dried fruit, 1/8 unsweetened coconut, 1 tbsp sliced almonds, and a ripe peach.
For a snack I had some green grapes.
Lunch still while working hard, I had some carrots, tomato, soy cheese, pb pretzels from Trader Joe's, and a Meatless Vegan Jerky Strip from Whole Foods. I'm not sure how I feel about these strips, they have a lot of protein for only 80 calories, but they were so chewy and I'm not sure how I liked the taste. I have different flavor left in my pantry to try, so hopefully that one is a little better.
The day I needed something the most, I didn't have any emergency snacks in my office. At 5:10pm I got really hungry because I hadn't had lunch since 12:30. I didn't have time to leave the building, so I ran to a vending machine to find if there was anything healthy. The best thing I could find was a Nature's Valley Oats and Honey Granola Bar. I usually don't buy these because I don't like the ingredients, but no Kashi bars were in sight!
I didn't leave work until 9:40pm and was very hungry, Steve picked me up from work and we went to Mad Mex which is such a great Mexican restaurant (but they are only in Pittsburgh, State College PA, Philly, and Columbus OH). They offer so many vegetarian and vegan options.
I needed a drink after my long day, so we got a carafe of white sangria:
For a starter we shared a Pizzaveraprima which was a new addition to their menu and the menu described it as "Grilled flatbread with Colorado sauce, cojita and Jack cheeses, chickpeas, cucumber, jícama, roasted corn, cherry tomatoes and peppers. " We asked for all the cheese to be soy cheese. If you can notice the tortilla chip that fell on our appetizer from a basket of chips the waitress had in her hands, you can get the idea that it was pretty small. I guess the size of a pita pocket. I ate half of it. We opted for this instead of chips and salsa.
For dinner The Mad Mex Quesadilla with marinated tofu, soy cheese, grilled peppers and onions. Although I usually like my entrees at Mad Mex, this was a little bland. The tofu didn't have much flavor. I had tofu sour cream, salsa, and guacamole on the side.
Well I hope the rest of my weekend is a little more relaxing than Friday was. Enjoy your Saturday!!

And I keep seeing different Bloggers trying that Vegan Jerky! Maybe I need to give it a shot! Everyone has said it is pretty good.
Your pizza and Mex meal look good. Sorry the tofu wasn't up to par. I've never had tofu with a mexican type meal though. Sounds interesting?
Hopefully you can relax a bit this weekend! Sounds like you need some down time!!
