Day 6 of Clean Eating

Today I went with Sunday's meals on the Clean Eating meal plan for everything except dinner when I followed Saturday (week 1).

Breakfast called for 3 buckwheat pancakes, topped with 1/2 cup fresh or thawed from frozen berries. My husband made the buckwheat pancakes and I microwaved frozen berries so they were warm. I was surprised how white in color these buckwheat pancakes turned out. I guess I thought they would be really dark.


I had a Nutty Maple-Cinnamon Bar for Snack 1. I ate this before going to the gym to go 45 minutes of upper body weights.

Lunch on the plan called for 1 lean ground beef patty or Boca meatless burger patty with mixed veggies, Dijon mustard, pickles and tomato sliceon whole-wheat bun. Lunch also included leftover pea soup (the magazine called it Chicken and Pea Soup but I used vegetarian bratwurst instead of the chicken sausage). I had the boca burger on a wheat thin with lettuce and Dijon mustard. I had bought pickles last weekend but then I saw they have HFCS in them, so I didn't have them, because HFCS isn't "clean eating".


Snack 2 was 2 tbsp of hummus and carrot sticks.

I used the dinner listed on Saturday's meal plan, which was Smothered Mushrooms (recipe on page 79 of Clean Eating), 1/2 cup of quinoa and a salad with the homemade dressing from the plan. Tonight when I went to make the quinoa in the rice cooker I realized that a few days ago when I was supposed to make quinoa with dinner, I actually made steel cut oatmeal. I grabbed the wrong grain container from my pantry. We buy both in bulk, and they are in unlabeled containers. However, the lesson learned was that steel cut oatmeal tastes great with tofu or as a dinner side dish.

This evening I felt like a treat that wasn't on the meal plan. I had a banana with a spoon of almond butter.


Well good night!! I hope Sunday is a long day, because I hate how the weekend flies by but the week drags on and on.

The smothered mushrooms look amazing! I bought this magazine but I left it at home when I moved! Would you mind posting the recipe?
