MIA but still taking Pictures!

So sorry that I haven't posted my meals. Work has kept me really busy, and unfortunately this lawyer needs to go into the office this weekend too. I think my busy schedule made me miss a few pictures so sorry if any excitement is lost.


THURSDAY

Breakfast was a parfait, using Udi's Granola, this granola really added a nice crunch to my parfait. I love this breakfast, because it really holds my hunger well.

I took a long lunch to go to a my brother-in-laws graduation from his nursing program. He received a 4 year degree in 2007 and then went back for a full year for a nursing degree. There was a luncheon after all the diplomas and normal graduation speeches and awards. No picture, but I had a scoop of fruit, a scoop of cooked vegetables, a spoon of roasted red potatoes (cooked in butter, which I am not a fan of). I had a little roll that was the size of 1/4 of a breadstick and as hard as wood, but I ate it because I was really hungry. There was not enough filling vegetarian food, so I stopped at Starbucks for a Vivanno for extra protein. This drink really filled me up!! Almost too full, but at least I knew I had enough fiber and protein.
Around 4pm I had a grapefruit (no picture because my camera batteries died at graduation and I didn't think to use my cell phone).


Around 6pm I knew I would be at work late and didn't want to be starve when I got home, so I went to the Au Bon Pain in my building. I had the Mediterranean Wrap but with no feta and no olives. They but hardly any hummus it is almost laughable. This filled me up and gave me energy to work until 8pm. I also had a Perrier and a glass of ice with lemon. Love Perrier!

When I got home I decided to make the Scones from Hungry Girl's cookbook. They looked quick and a great breakfast. Although to this recipe I added 1 Tablespoon of sliced almonds and 2 tablespoons of flax meal. Which takes us to Friday....

FRIDAY

I was hungry when I woke up so I ate a plain Scone, then at about 8:30 at work I ate another Scone with Justin's Nut Butter Almond Butter (LOVE THIS) and Jam. I was fueled until lunch.

I started getting hungry as I was walking to a noon Spin Class, which was horrible because I started losing energy while spinning. I did 40 minutes and burned 350 calories (based on my heart rate monitor). When I got back to the office I was too ready for lunch. I had a vegetarian sloppy joe and some carrots with homemade hummus. My plate looks like a face on a pumpkin. This was so good, but it took 20 minutes to really know that I was full because I was so starved when I started lunch. So waiting is key!



Around 3:30 my husband walked over to my building with a latte from Dunkin Donuts. This was a great snack to hold me until dinner. Here is my coffee with a view out of my office window.



For dinner we had a HUGE zucchini from Steve's Uncle that we needed to use, so I decided that we would try Kath's Summer Squash Gratin. Here is the finished product:


We also made some bruschetta and grilled a sweet potato. While the food was cooking I snacked on a sliced raw kohlrabi and tomato. Oh and a glass of wine:)


This was such a wonderful summer dinner and we still have half of the Gratin leftover. Here is my plate:

Booo for lawyering on the weekends. Good for you for keeping it healthy in stressful work times, though.

Your parfait looks great - better than one you could buy in the store.
