Fall Foods : )

For breakfast, my husband made me a latte and I had a Luna bar.

Right before I walked out the door, I decided that the above would not be enough of a breakfast, so I had a piece of toast with chocolate dreams and strawberry preserves.


For a mid morning snack I had some grapes.

I went to the gym at noon and ran 1.7 miles and then did 13 minutes on the stair climber.
Lunch was a Kashi Veggie Sandwich pocket and some raw veggies (carrots, cucumbers, and snap peas) dipped in a little Newman's Own Honey Mustard dressing.


Around 4pm I had some yogurt and the last of our berries.

As soon as I walked through the door from work I put the acorn squash in the oven and tried to go upstairs and do Pilates (last week was the last week of the fall semester Pilates class I take at the community college). Then in the middle of my workout the DVD froze on me and I couldn't get it back to the place it stopped. We may have to take this TV (DVD player built in) back. We have only had it for a few months and it skips each time. Plus, my Pilates DVD was brand new, so it wasn't dirty or scratched.
For the stuffing in the acorn squash I used Lindsay's awesome recipe I saw a while back on her blog For the Love of Oats. On the side I had a piece of bruschetta.


After cooking dinner I told my husband that I would make him a pumpkin roll - he had been asking for a few weeks now. I used a recipe I found online like 5 years ago. I had printed it out back then, and it was in my mom's recipe box. So, long story short, I don't have the link, but I think that is a pretty basic pumpkin roll recipe. You can even find a recipe on the inside of the Libby's Pumpkin label.

I didn't try it, because I have never really liked pumpkin roll, but my wonderful husband exclaimed that it was better than store bought :)

the one time i made a roll like that it fell apart, completely. it was hilarious. yours looks gorgeous!
