Back from Hawaii!!

So sorry that I didn't get to post before I left, so hopefully I didn't lose too many readers!! I just got back from 8 days in Hawaii. I may post a few pictures tomorrow and I will start back to daily blogging tomorrow.

Unless it was for work (which was less than 30 minutes a day) I didn't use the Internet all week, so lots of reading to do!!

Tag I'm It!

OK, so here goes, 6 things about me.

1. I strive for perfection. For example, I double majored in Political Science - Prelaw and Economics in College and I received one B the whole 4 years and it was in an African American Studies Class, so the last quarter of my Senior Year I retook that class so that I could graduate with a 3.92 and Summa Cum Laude. The B would have held me at Magna Cum Laude.

2. I had planned to try out for cheerleading in college and I worked on my tumbling all summer and in August before my freshman year I broke my elbow doing a back handspring. My mom said it was the best thing that ever happened to me. I guess she didn't think I could be an Honors Student and a College Cheerleader. I was an Universal Cheerleading Associations All-Star in High School, the captain, and I cheered in the London New Year's Parade on January 1, 2000 and the Macy's Thanksgiving Day Parade. I am so excited for the Wii Cheerleading Game to come out :P

3. Sometimes I like to put my ipod on and dance in front of the mirror and sing into my hair brush pretending that I am on stage (i.e. American Idol). One time I was in our bedroom and my husband kept calling me from downstairs and finally he came up to check on me and I was totally rocking out in front of the mirror. He was at a loss for words.

4. I need to sleep with a cover all the way to my neck. I will get so hot in the middle of the night that my husband calls me a furnace, but I still need to be covered up to by neck.

5. I met my husband at a night club, we danced all night and I didn't expect him to ask for my number and when he did I didn't expect him to call. We tell most people that we met on the University Campus during my first year of law school.

6. I get grossed out seeing someone trim their toe nails, really I get chills. Some lady at the gym was doing it on the floor by her locker and I almost lost my lunch.

Starbucks Sucker!!

Thanks for all of the get well wishes. I'm feeling better today. I found out that a few other people from my work got sick, a group of us went to volunteer with disabled kids on Saturday and played games in a gym with them. The girl that partnered with me held my hand the whole time and had her head on my shoulder, so I easily could have picked up germs.

Steve thinks that juice is the best thing to drink when you are sick, so I listen to him and had another of my drinks, this time I used light orange juice. This was no where good as the mixture with Naked Juice last night. This light orange juice is already watered down enough that mixing with more water just made it pretty tasteless. I took this drink in a purple cup for the car ride.

Breakfast was a repeat of yesterday's because it was so yummy, Chocolate Covered Cherry Oatmeal. Love it!! I may have to try Christie's suggestion and add Carob powder sometime although Chocolate Whey might taste good too.


Because of my sore throat (although I don't really need an excuse for Starbucks) I thought something cold would be good, so around 10am I had a Mocha Light Frap.



I decided that because I wasn't feeling weak, I would take the noon spin class, I could feel a difference from my healthy spinning, but I still managed to burn 300 calories in 35 minutes.

I ate lunch after Spinning. I had a can of Muir Glen lentil soup, this is one of my favorite brands. I really love having soup for lunch, the only downside is the high sodium count is canned soup. I also had some carrots and the last of my homemade hummus.



I was super busy, but around 4pm I wanted a snack. I couldn't believe how fast I ate this! I felt so pressured to get a project done, that I hogged it up. I know that I need to focus on eating more slowly.
I got home for dinner around 6:30pm and made Annie's Whole Wheat White Cheddar Mac & Cheese. I love this kind and it uses animal enzyme free cheese (which is the only kind I eat). I used 0% fage instead of milk and added morningstar crumbles and peas. This was such a great meal and I can't wait to make it again! Steve liked it too.


Starbucks sucked me in with its new promo which entitles morning customers to a $2 iced drink with their morning receipt. So after dinner I got a Skinny Vanilla Latte. Too much Caffeine for me, when up until 2 months ago I hadn't had any coffee products for over a year in an attempt to control bad acid reflux problems, but it tastes so good. No picture of the PM latte.

Last reminder about the udi's granola contest, I changed the date to Thursday, so please enter by Thursday at 5pm. Steve will pick the winner Thursday night.

Unhealthy Lawyer!

Last night Blogger was having an internal error and I couldn't upload my pictures. My throat still hurts but I have still been eating as normal.


Breakfast was Chocolate Covered Cherry Oatmeal. I used 1/2 cup oats, 1/2 cup of canned pitted cherries (no sugar added), 2/3 cup unsweetened almond breeze and a little more water as needed. I also mixed in a yogurt. This picture doesn't look the best, but it really was so good.





Lunch (because my throat hurt) was a GNC Peanut Butter Surprise Smoothie from the GNC Smoothie Bar. It included Chocolate soy milk, peanut butter, banana, and some GNC smoothie mix. No picture because I drank it walking around town with Steve and threw it away without thinking before going back to work. It was a 20 ounce smoothie.


Part two of my lunch was back at the office...a Peanut Butter Cookie Larabar. Whole Foods finally had them in and it was so worth the wait. Mine was cold from being in the work fridge, but that didn't change the flavor. I really thought it tasted like a Peanut Butter Cookie. I was really full after this and the shake.

Around 4pm I left work because I was feeling sick and when I got home I had a bowl of grapes.


For dinner I tried Amy's Gluten Free Cheese Pizza with Rice Crust. It was different but it still tasted good. I added some broccoli and mushrooms.


While the pizza cooked I ate some baked tostitos (not pictured) and carrots with Annie's Dressing.

Here is the picture of my pizza. I resorted to a habit I have, because Steve wasn't home to sit down with me, and I ate this pizza standing up (that is why I picture is still on the pan). The full pizza serves three so I had about 1.5 servings since I ate half of the pizza.

I am not a big juice drinker, but because my throat was feeling so sore, I decided that I would have some but I mixed it with sparkling mineral water. I used 1/2 cup Naked juice and 3/4 cup of mineral water. This was so good and may become a drink for even when I'm not sick.

Off to work, later than I had hoped. See you all tonight!!

Quick Question: I am stressed that I haven't worked out since Friday because I haven't felt well, what do you do (if anything) for exercise when you are sick?

Weekend recap, short but sweet!

Well I attempted to take pictures of my eats this weekend, but Saturday my throat started to hurt and I slept most of Sunday. While I managed to eat, I don't want to stress about catching up with a long post tonight, plus I missed pictures of a lot of meals. So tonight I'll have a post summarizing today. This sums up a little of the weekend!

Saturday night Steve and I met another couple at the Melting Pot (wish I had pictures). The vegetarian entree was pretty yummy (but not really sure it is worth the price). I haven't been to the Melting Pot for 3 years, so it was really fun even if it is super expensive. I was so full from dinner that sadly we didn't even get the chocolate fondue! I told Steve that I want to come back soon just for dessert, because we passed it up this time.

Sunday night, Steve woke me up from my benadryl induced slumber to tell me we had to leave for his family's dinner at Joe's Crab Shack. So no pictures because all I had was unsweetened iced tea. But I do feel like ranting about Joe's Crab Shack. I add a disclaimer that I was sick when I went here last night and maybe wouldn't have eaten anything either way, I couldn't believe that the only vegetarian option was a small house salad. I even called ahead last week when I heard we were going here and the girl said "well we have a salad." Normally I do just get a house salad and baked potato if that is all a restaurant offers. I'm not one to make a fuss, I just work around the menu. I just can't believe it is that hard to at least have a garden burger on the menu. So I sat with about 15 of Steve's family and didn't even eat anything, which is obviously awkward. At least I had the sore throat to point to.

Here's to hoping my throat clears up soon, because Steve and I are leaving for Hawaii this Saturday!

MIA but still taking Pictures!

So sorry that I haven't posted my meals. Work has kept me really busy, and unfortunately this lawyer needs to go into the office this weekend too. I think my busy schedule made me miss a few pictures so sorry if any excitement is lost.


THURSDAY

Breakfast was a parfait, using Udi's Granola, this granola really added a nice crunch to my parfait. I love this breakfast, because it really holds my hunger well.

I took a long lunch to go to a my brother-in-laws graduation from his nursing program. He received a 4 year degree in 2007 and then went back for a full year for a nursing degree. There was a luncheon after all the diplomas and normal graduation speeches and awards. No picture, but I had a scoop of fruit, a scoop of cooked vegetables, a spoon of roasted red potatoes (cooked in butter, which I am not a fan of). I had a little roll that was the size of 1/4 of a breadstick and as hard as wood, but I ate it because I was really hungry. There was not enough filling vegetarian food, so I stopped at Starbucks for a Vivanno for extra protein. This drink really filled me up!! Almost too full, but at least I knew I had enough fiber and protein.
Around 4pm I had a grapefruit (no picture because my camera batteries died at graduation and I didn't think to use my cell phone).


Around 6pm I knew I would be at work late and didn't want to be starve when I got home, so I went to the Au Bon Pain in my building. I had the Mediterranean Wrap but with no feta and no olives. They but hardly any hummus it is almost laughable. This filled me up and gave me energy to work until 8pm. I also had a Perrier and a glass of ice with lemon. Love Perrier!

When I got home I decided to make the Scones from Hungry Girl's cookbook. They looked quick and a great breakfast. Although to this recipe I added 1 Tablespoon of sliced almonds and 2 tablespoons of flax meal. Which takes us to Friday....

FRIDAY

I was hungry when I woke up so I ate a plain Scone, then at about 8:30 at work I ate another Scone with Justin's Nut Butter Almond Butter (LOVE THIS) and Jam. I was fueled until lunch.

I started getting hungry as I was walking to a noon Spin Class, which was horrible because I started losing energy while spinning. I did 40 minutes and burned 350 calories (based on my heart rate monitor). When I got back to the office I was too ready for lunch. I had a vegetarian sloppy joe and some carrots with homemade hummus. My plate looks like a face on a pumpkin. This was so good, but it took 20 minutes to really know that I was full because I was so starved when I started lunch. So waiting is key!



Around 3:30 my husband walked over to my building with a latte from Dunkin Donuts. This was a great snack to hold me until dinner. Here is my coffee with a view out of my office window.



For dinner we had a HUGE zucchini from Steve's Uncle that we needed to use, so I decided that we would try Kath's Summer Squash Gratin. Here is the finished product:


We also made some bruschetta and grilled a sweet potato. While the food was cooking I snacked on a sliced raw kohlrabi and tomato. Oh and a glass of wine:)


This was such a wonderful summer dinner and we still have half of the Gratin leftover. Here is my plate:

CONTEST!!!

Although I am really busy coming up with great entries for Kath's Contest, I am having a Contest of my own. Udi's Granola, which sent me a lovely box of their products to try, wants to send a lucky reader their own box of Granola to sample.

In order to enter you must send me a picture and recipe of your best use for granola. I should warn you that Udi's Granola does use honey and the Hawaiian has egg whites. So if you are a Vegan that does not eat honey, you may not like the prize, but you are still welcome to enter the contest!

I will be accepting entries until next Wednesday August 6. I will then announce the winner next Thursday. Udi's cannot send their Granola to a P.O. Box, so it must be a U.S. address that is not a P.O. Box.

So that there is no bias, my husband will be the one picking the winner.
